Don’t you just love a recipe that you can quickly whip up before you go to bed and put it in the fridge ready for the next day? In the morning pull it out of the fridge, add the topping, and pop it in the oven. In 45 minutes you have a delicious breakfast. As you are getting ready for the day your house fills with the fabulous aroma coming from the oven.
Reality check…I also make this in the morning, pop it in the fridge and go about my day. In the evening all I have to do is bake it and voila…breakfast for supper!
As good as all of that is, the truly best part of this recipe…

We eat this delicious French Toast Casserole all year round – for breakfast, brunch, and supper. But, I have been waiting to share this recipe with you until now because it is wonderful on Christmas morning. Think about it…as you and your loved ones are opening gifts, taking pictures, and treasuring special moments, the oven is doing all the work (with what you prepped the night before). After all the excitement that Christmas morning offers, a warm, delicious breakfast is ready for you! And you didn’t miss all the excitement while slaving away in the kitchen.

Here’s the recipe:
Overnight French Toast Casserole
Casserole:
1 loaf French bread (or any crusty bread) torn into bite size cubes
10 eggs
3 cups milk
4 teaspoons sugar
1 teaspoon vanilla extract
Place the bread cubes into a buttered 9 x 13 buttered casserole dish
In a bowl, whisk the eggs, milk, sugar and vanilla together.
Pour the egg mixture over the bread cubes, smooshing the bread down, so every last bit is saturated .
Cover with foil and refrigerate for 6 to 8 hours.
In the morning (or evening) remove from the refrigerator and assemble the topping.
Topping:
2 tablespoons butter
3 tablespoons sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
Dot the casserole with the butter.
Combine sugar, cinnamon, and nutmeg. Sprinkle on top.
Cover with foil and bake at 350 degrees Fahrenheit for 45 minutes or until butter knife inserted in center comes out clean.
